Crispy German Pretzel Bites with Beer Cheese Dip

Authentic homemade German pretzel bites featuring a dark, chewy crust achieved through a traditional lye bath, served with a warm, tangy beer cheese dip.

  • 500g (3 ¾ cups) All-Purpose Flour (or Bread Flour)
  • 300ml (1 ¼ cups) Warm Water (110°F/43°C)
  • 7g (1 packet) Instant Yeast
  • 2 tbsp Sugar (brown sugar recommended)
  • 2 tsp Salt
  • 30g Unsalted Butter, melted
  • 2 tbsp Food-Grade Lye flakes
  • 4 cups Cold Water (for lye bath)
  • Coarse Sea Salt (for sprinkling)
  • Sharp Cheddar Cheese, shredded (for dip)
  • Cream Cheese (for dip)
  • Beer (lager or pilsner) (for dip)
  • Mustard (for dip)
  • Garlic Powder (for dip)

Instructions

  1. In a large bowl, combine warm water, sugar, yeast, and salt. Let sit for 5 minutes until foamy.
  2. Add melted butter and flour. Mix until a shaggy dough forms, then knead for 8-10 minutes until smooth and elastic.
  3. Place dough in a greased bowl, cover with a damp towel, and let rise in a warm spot for 1 hour or until doubled in size.
  4. While dough rises, prepare the lye bath: dissolve 2 tablespoons of lye flakes in 4 cups of cold water in a large, deep pot. Let cool to room temperature. Wear gloves and goggles.
  5. Punch down the dough. Roll into a long log and cut into bite-sized pieces. Roll each piece into a ball and place on parchment-lined baking sheets.
  6. Cover shaped bites and let rise for 30 minutes until puffy.
  7. Preheat oven to 425°F (220°C). Working in batches, drop pretzel bites into the lye bath for 10 seconds per side.
  8. Remove with a slotted spoon and place on baking sheets. Immediately sprinkle with coarse sea salt.
  9. Bake for 12-15 minutes until dark brown/mahogany.
  10. While pretzels bake, make the dip: melt cream cheese and butter in a saucepan. Add beer and mustard. Stir in shredded cheddar until smooth. Season with garlic powder.
  11. Serve warm pretzel bites with the hot beer cheese dip.

Notes

Always wear gloves and eye protection when handling lye. Add lye to water, never water to lye. Use a glass or stainless steel pot for the lye bath. If you cannot find lye, you can substitute with a baking soda bath, but the color and flavor will be lighter. Store leftovers in an airtight container at room temperature for up to 2 days. Reheat in the oven to restore crispiness.
