  • 1 cup all-purpose flour (125 grams)
  • 1 large egg, beaten (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 4 ounces dark chocolate (about 115 grams), chopped
  • 1/2 cup heavy cream (120 ml)
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine 1 cup (240 ml) water, 2 1/2 tablespoons sugar, 1/2 teaspoon salt, and 2 tablespoons vegetable oil. Bring to a rolling boil over medium heat. Once boiling, remove from heat immediately.
  2. Quickly stir in 1 cup (125 grams) all-purpose flour until the mixture forms a ball and pulls away from the sides of the pan, about 1 to 2 minutes. Let the dough cool for 5 minutes so it’s warm but not hot.
  3. Transfer dough to a mixing bowl. Add 1 beaten egg and 1 teaspoon vanilla extract. Stir vigorously until fully incorporated and smooth. The dough should be thick but pipeable. If too stiff, add a tiny splash of water (a teaspoon at a time).
  4. Pour vegetable oil into a deep frying pan or pot to a depth of about 3 inches. Heat to 350°F (175°C). Use a candy thermometer to check, or test oil by dropping a small piece of dough in—it should sizzle and rise immediately.
  5. Fill a piping bag fitted with a large star tip with the dough. Pipe 2-inch lengths directly into the hot oil, cutting with scissors or a knife. Fry in batches, avoiding overcrowding, for 2 to 3 minutes or until golden brown and crispy. Turn occasionally for even cooking.
  6. Remove churro bites with a slotted spoon and place on paper towels to drain excess oil. While still warm, toss in the cinnamon sugar mixture until evenly coated.
  7. In a small saucepan, heat 1/2 cup (120 ml) heavy cream just until it starts to simmer. Remove from heat and add 4 ounces (115 grams) chopped dark chocolate, 1 tablespoon unsalted butter, 1 teaspoon vanilla extract, and a pinch of salt. Stir until smooth and glossy.
  8. Arrange churro bites on a platter with a small bowl of the chocolate sauce for dipping. Enjoy immediately for best crispness.

Notes

Maintain oil temperature at 350°F (175°C) to avoid greasy or burnt bites. If dough is too stiff to pipe, warm gently to loosen. Fry in small batches to keep oil temperature steady. Use a large star tip for classic churro ridges. Chocolate sauce should be stirred off heat to avoid graininess. For gluten-free, swap all-purpose flour with gluten-free blend. For dairy-free chocolate sauce, use coconut cream instead of heavy cream.
