Instructions

  1. Soak wooden skewers in warm water for 15 minutes to prevent burning. Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
  2. In a medium mixing bowl, combine ground chicken, panko breadcrumbs, egg, garlic powder, onion powder, salt, pepper, and cornstarch. Mix until just combined; do not overmix.
  3. Roll the mixture into 1-inch diameter meatballs (yields 20-24 meatballs).
  4. Thread 2-3 meatballs onto each skewer, leaving space between them for air circulation.
  5. Place skewers in the air fryer basket or on a parchment-lined baking sheet.
  6. Cook for 10-12 minutes in the air fryer or 15-18 minutes in the oven, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
  7. While meatballs cook, melt butter and stir in buffalo sauce until smooth.
  8. Toss cooked meatballs in the buffalo sauce mixture or brush generously over skewers. Serve immediately or return to heat for 1-2 minutes to set sauce.
