  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese (about 100 g)
  • 12 slices thin-cut bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Preheat your oven to 400°F (205°C). Line a baking sheet with foil or parchment paper.
  2. Wearing gloves, slice each jalapeno in half lengthwise and carefully scoop out the seeds and membranes to control heat level.
  3. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix until smooth and well blended.
  4. Fill each jalapeno half generously with the cheese mixture, smoothing it level with the edges.
  5. Cut each bacon slice in half lengthwise if desired. Wrap each stuffed jalapeno half tightly with a bacon strip, overlapping ends slightly to hold the cheese inside. Secure with toothpicks if needed.
  6. Place the wrapped jalapenos seam side down on the prepared baking sheet.
  7. Bake for 20-25 minutes or until bacon is crispy and golden and cheese is bubbly. Tent with foil if bacon browns too quickly.
  8. Let rest for 5 minutes before serving to allow cheese to set.

Use gloves when handling jalapenos to avoid skin irritation. For best results, use thin-cut bacon that crisps well but is not ultra-thin.
