Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Peel and slice apples into 1/4-inch thick wedges.
  3. In a large bowl, toss sliced apples with granulated sugar, 1/2 cup brown sugar, cinnamon, nutmeg, ginger, vanilla, lemon juice, and cornstarch until coated. Let sit for 10 minutes.
  4. In a separate bowl, whisk together rolled oats, flour, and salt. Add cold cubed butter and work it in with fingers or a pastry cutter until the mixture resembles coarse crumbs with pea-sized lumps. Stir in nuts if using.
