  • 34 lbs butternut squash, peeled and cut into 1-inch cubes
  • 1 large yellow onion, chopped into large chunks
  • 4 cups vegetable broth (low-sodium)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 inch piece fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp curry powder
  • Salt and black pepper to taste
  • Optional toppings: toasted pumpkin seeds, olive oil, fresh cilantro

Instructions

  1. Cut the butternut squash in half lengthwise, scoop out seeds, and cut flesh into 1-inch cubes. Place cubes into the slow cooker.
  2. Add chopped yellow onion, minced garlic, and grated fresh ginger to the slow cooker on top of the squash.
  3. Sprinkle cumin, smoked paprika, curry powder, salt, and pepper over the vegetables. Pour in the vegetable broth and stir gently to distribute spices.
  4. Cover and cook on LOW for 6 to 8 hours until the squash is fork-tender. (Alternatively, cook on HIGH for 3-4 hours).
  5. Turn off the slow cooker. Carefully transfer the mixture to a blender in batches or use an immersion blender directly in the pot. Blend until completely smooth.
  6. Stir in the full-fat coconut milk. Taste and adjust seasoning with more salt or pepper if needed. If too thick, add a splash of broth; if too thin, simmer on HIGH for 15 minutes uncovered.
  7. Ladle into bowls and serve immediately with optional toppings like toasted pumpkin seeds or a drizzle of olive oil.

Notes

For best results, use fresh ginger rather than dried. If using a standard blender, blend in short bursts to avoid incorporating too much air. The soup tastes even better the next day as flavors meld. It freezes well for up to 3 months.
