  • 2 cups gingersnap cookie crumbs
  • 1/2 cup (1 stick) unsalted butter, melted
  • 8 ounces full-fat cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 cup 100% pure pumpkin puree
  • 2 large eggs, room temperature
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
  2. Crush gingersnap cookies into fine crumbs. Mix crumbs with melted butter until resembling wet sand. Press firmly into the bottom of the prepared pan.
  3. Bake the crust for 8-10 minutes until set and fragrant. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese and sugar until smooth and creamy (2-3 minutes).
  5. Add pumpkin puree, eggs, pumpkin pie spice, vanilla extract, and salt. Mix on low speed until just combined. Do not overmix.
  6. Pour filling over the pre-baked crust and spread evenly. Tap pan gently to release air bubbles.
  7. Bake at 350°F (175°C) for 25-30 minutes, until edges are set and the center is slightly jiggly.
  8. Cool in the pan on a wire rack for at least 30 minutes.
  9. Transfer to the refrigerator and chill for at least 2 hours (or overnight) before slicing.
  10. Lift bars out using parchment overhang, slice into squares, and serve chilled.

Notes

Ensure cream cheese is fully softened to avoid lumps. Do not overmix after adding eggs to prevent cracking. Bars must be chilled completely for clean slices. Can be frozen for up to 3 months.
