  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana, mashed
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a jar or container until mostly smooth with a few small lumps.
  2. Add milk, Greek yogurt, peanut butter, maple syrup (if using), and vanilla extract. Stir until peanut butter is mostly incorporated.
  3. Add rolled oats, chia seeds, and a pinch of salt. Stir until well combined, ensuring no dry pockets of oats remain.
  4. Check consistency: mixture should be slightly thinner than desired breakfast texture. Add a splash more milk if needed.
  5. Seal the jar and refrigerate overnight (at least 6 hours, ideally 8-12 hours).
  6. In the morning, stir well, scraping the bottom to incorporate settled chia seeds. Add a tablespoon or two of milk if too thick.
  7. Add toppings like sliced banana, extra peanut butter, dark chocolate chips, or chopped peanuts. Serve cold or warm.

Notes

Mashing the banana into the oat mixture is key for creamy texture. For meal prep, make in separate jars and leave toppings off until serving. Oats keep in the fridge for up to 5 days. Do not freeze.
