A quick and easy one-pan Tuscan chicken recipe featuring tender chicken breasts in a creamy sauce with spinach and sun-dried tomatoes. Perfect for busy weeknights or dinner parties.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed recommended)
  • 3 cups fresh spinach, roughly chopped (about 90g)
  • 1/2 cup cottage cheese (optional but recommended)
  • 1 cup heavy cream (240ml)
  • 1/2 cup grated Parmesan cheese (about 50g)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried Italian herbs. Let sit for about 5 minutes.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet. When shimmering, add chicken breasts and sear for 4-5 minutes on each side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside.
  3. Lower heat to medium. Add minced garlic to the same pan and stir for about 30 seconds until fragrant, being careful not to burn it.
  4. Add chopped sun-dried tomatoes and fresh spinach. Cook until spinach wilts, about 2-3 minutes.
  5. Stir in heavy cream and cottage cheese (if using). Break up cottage cheese gently with a wooden spoon to blend smoothly. Simmer for 3-4 minutes until sauce thickens slightly.
  6. Add grated Parmesan cheese and adjust seasoning with salt and pepper. The sauce should be creamy, rich, and slightly tangy.
  7. Return chicken breasts to the pan, nestling them into the sauce. Spoon sauce over the chicken. Cover pan and reduce heat to low. Simmer gently for 5 minutes to meld flavors and finish cooking.
  8. Remove lid, stir sauce gently, and optionally sprinkle more fresh spinach or Parmesan before serving.

Notes

Let chicken come to room temperature for 15 minutes before cooking for even cooking. Avoid moving chicken too much while searing to get a good crust. If sauce is too thick, add a splash of chicken broth or water; if too thin, simmer uncovered to reduce. Cottage cheese adds creaminess without heaviness; cream cheese or mascarpone can be used as alternatives with seasoning adjustments.
