A quick and easy creamy chicken dish featuring sun-dried tomatoes, garlic, and herbs in a luscious sauce that pairs perfectly with mashed potatoes or crusty bread.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 ounces / 170 grams each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil)
  • 1 cup chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful of fresh basil leaves, torn

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and freshly ground black pepper.
  2. Place a large skillet over medium-high heat. Add olive oil and butter and wait until the butter melts and starts to foam.
  3. Add the chicken breasts to the hot pan, spacing them out. Cook for about 4–5 minutes per side until golden brown and almost cooked through. Remove from the pan and set aside.
  4. Lower the heat to medium. Add minced garlic and sun-dried tomatoes to the pan. Stir constantly for about 1 minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let simmer for 2–3 minutes to slightly reduce.
  6. Stir in the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Simmer gently until the sauce thickens, about 4–5 minutes.
  7. Return the chicken breasts to the pan. Spoon sauce over the top. Cover loosely and simmer on low for another 5 minutes until chicken is cooked through (internal temperature 165°F / 74°C).
  8. Just before serving, sprinkle torn fresh basil leaves over the dish.

Notes

If the sauce is too thin, simmer a little longer to thicken. If too thick, add a splash more broth or cream. Avoid overcrowding the pan when searing chicken to get a golden crust. Fresh basil at the end brightens the dish. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
