  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup milk or heavy cream
  • 68 strips cooked bacon, crumbled
  • 34 green onions, sliced
  • Sour cream for serving
  • Extra shredded cheddar cheese for serving

Instructions

  1. Prep the Vegetables: Peel potatoes and cut into 1-inch cubes. Dice the yellow onion and mince the garlic.
  2. Combine in the Slow Cooker: Add cubed potatoes, diced onion, minced garlic, chicken broth, unsalted butter, salt, and pepper to the slow cooker. Stir to combine.
  3. Slow Cook: Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until potatoes are fork-tender.
  4. Thicken the Soup: Using a potato masher, gently mash the potatoes in the slow cooker about 10-15 times, breaking up about half the potatoes to thicken the broth. Alternatively, use an immersion blender for a smoother texture.
  5. Add the Dairy: Stir in the shredded cheddar cheese and milk or heavy cream until the cheese is fully melted and the soup is smooth. Taste and adjust salt and pepper as needed.
  6. Prepare the Toppings: Cook bacon until crispy (bake at 400°F for 15-18 minutes), then crumble. Slice green onions.
  7. Serve: Ladle soup into bowls and top with crumbled bacon, sliced green onions, a dollop of sour cream, and extra shredded cheddar. Serve immediately.

Notes

For the smoothest cheese melt, shred your own cheddar from a block. Add the cheese when the soup is off the heat or on ‘warm’ to prevent graininess. The soup thickens as it sits; thin with a splash of milk or broth when reheating. Not recommended for freezing due to dairy content.
