A rich, comforting soup made with russet potatoes, sharp cheddar, and crispy bacon. This easy weeknight meal features a creamy roux base and is ready in about 30 minutes.

  • 2 pounds Russet potatoes, peeled and diced into 1/2-inch cubes
  • 810 slices thick-cut bacon, diced
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 34 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1.5 cups sharp cheddar cheese, shredded
  • 45 stalks green onions, sliced
  • 1/2 cup sour cream, for serving
  • Salt and black pepper, to taste

Instructions

  1. Peel and dice potatoes into 1/2-inch cubes. Place in cold water to rinse off excess starch, then drain and set aside.
  2. In a large Dutch oven over medium-high heat, cook diced bacon until crispy (8-10 minutes). Remove bacon with a slotted spoon, leaving about 2 tablespoons of fat in the pot.
  3. Reduce heat to medium. Add diced onion to the bacon fat and sauté for 5 minutes until soft. Add minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle flour over the onions and garlic. Stir constantly for 2 minutes to create a roux.
  5. Slowly pour in chicken broth while whisking constantly to prevent lumps. Stir in heavy cream and bring to a gentle simmer.
  6. Add drained potato cubes to the pot. Reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  7. Remove pot from heat. Use an immersion blender to blend about half of the soup, leaving chunks of potato.
  8. Return pot to low heat. Stir in shredded cheddar cheese a handful at a time, waiting for each addition to melt.
  9. Stir in half of the crispy bacon. Season with salt and pepper to taste.
  10. Ladle into bowls and top with remaining bacon, green onions, and a dollop of sour cream.

Notes

For a gluten-free version, swap all-purpose flour for a 1:1 gluten-free flour blend. For dairy-free, use olive oil, coconut cream, and nutritional yeast. To make it vegetarian, skip the bacon and use vegetable broth with smoked paprika. If the soup is too thin, blend more potatoes or use a cornstarch slurry. Cheese should be added off heat or on lowest setting to prevent clumping.
