  • 1 tablespoon (12g) chia seeds
  • Pinch of salt
  • 1/2 cup (120ml) milk of choice (e.g., unsweetened almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1 ripe banana, sliced (for topping)

Instructions

  1. In a mason jar or airtight container, combine rolled oats, chia seeds, and a pinch of salt. Stir to mix.
  2. Add milk, Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract to the jar.
  3. Stir vigorously with a whisk or fork until the peanut butter is fully incorporated and the mixture is smooth. Alternatively, seal the jar and shake well for 15 seconds.
  4. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats to recombine any separated liquid. The texture should be thick and creamy.
  6. Top with sliced banana, an extra drizzle of peanut butter, and a sprinkle of chia seeds or chopped peanuts if desired. Serve cold or microwave for 45-60 seconds for a warm breakfast.

Notes

For an even creamier texture, grate half a banana into the mixture before refrigerating. The oats taste even better on day 2 or 3 as flavors meld. If reheating, add a splash of milk before microwaving to restore creaminess.
