  • 1 lb boneless, skinless chicken breasts, sliced thin
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth, preferably low sodium
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 8 oz fettuccine pasta
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook 8 oz of fettuccine according to package instructions until al dente, about 10-12 minutes. Drain and set aside, reserving 1/2 cup of pasta water.
  2. While pasta cooks, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season sliced chicken breasts with salt and pepper. Sear chicken for 4-5 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  3. Reduce heat to medium. Add 2 tablespoons unsalted butter to the same skillet. Once melted, add 4 minced garlic cloves. Stir constantly for about 1 minute until fragrant.
  4. Sprinkle 2 tablespoons all-purpose flour over the garlic butter and whisk continuously for 1-2 minutes to cook out raw flour taste.
  5. Slowly pour in 2 cups chicken broth while whisking to prevent lumps. Then add 1 cup heavy cream. Raise heat to medium-high and stir until sauce thickens, about 3-4 minutes.
  6. Lower heat to medium-low and stir in 1 cup freshly grated parmesan cheese until melted and smooth. If sauce is too thick, stir in reserved pasta water a tablespoon at a time until desired consistency.
  7. Return cooked chicken to skillet and toss with sauce. Add cooked pasta and gently mix until well coated. Taste and adjust salt and pepper as needed.
  8. Sprinkle chopped fresh parsley over the top for garnish. Serve immediately.

Notes

Do not rush the roux stage to avoid raw flour taste. Use freshly grated parmesan for best melt and flavor. Keep pasta water handy to adjust sauce consistency. Season chicken well and sear on medium-high heat for best texture. Avoid burning garlic by stirring constantly.
