Creamy Crockpot White Chicken Chili with Corn

A rich, velvety slow cooker chili featuring tender shredded chicken, sweet corn, white beans, and a creamy dairy broth. This easy, one-pot meal is perfect for busy weeknights and freezes beautifully.

  • 2 pounds boneless, skinless chicken breasts
  • 2 cans (15 oz each) Great Northern beans or cannellini beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1 can (4 oz) diced green chiles (such as Hatch or Jalapeño), undrained
  • 2 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon paprika
  • 8 ounces full-fat cream cheese, cut into cubes
  • 0.5 cup heavy cream or half-and-half
  • Salt and black pepper to taste

Instructions

  1. Dice the onion and mince the garlic. If using fresh corn, cut the kernels off the cob.
  2. Place the diced onion, minced garlic, rinsed beans, frozen corn, diced green chiles (with juice), and chicken broth into the slow cooker. Stir gently to combine.
  3. Place the chicken breasts on top of the vegetable mixture. Season the chicken lightly with salt and pepper.
  4. Sprinkle the cumin, oregano, and paprika over the chicken and vegetables.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken reaches an internal temperature of 165°F and shreds easily.
  6. Remove chicken from the pot and shred into bite-sized pieces using two forks. Return shredded chicken to the slow cooker.
  7. Stir in the cubed cream cheese and heavy cream. Allow residual heat to melt the cream cheese. If too thick, add a splash of broth; if too thin, cook uncovered on high for 30 minutes.
  8. Taste and adjust salt and pepper as needed. Serve hot.

Notes

Do not add cream cheese at the beginning of cooking as it may separate. For a thicker chili, mash some beans against the side of the pot before adding dairy. This recipe is naturally gluten-free but check broth labels. Can be frozen for up to 3 months.
