  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 1 can (15 oz) white corn kernels, drained
  • 1 can (4 oz) diced green chilies
  • 3 cups chicken broth (preferably low-sodium)
  • 4 oz cream cheese, softened
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Finely chop one medium onion and mince three garlic cloves. If your crockpot has a sauté function, cook the onions and garlic for 3-4 minutes until softened and fragrant. This step is optional.
  2. Place 1.5 pounds of boneless, skinless chicken breasts in the crockpot on top of the onions and garlic.
  3. Add 3 cups of chicken broth, 1 tablespoon cumin, 1 teaspoon chili powder, 1 teaspoon oregano, and salt and pepper to taste. Stir gently to distribute the spices.
  4. Drain and rinse two 15 oz cans of Great Northern beans, one 15 oz can of white corn, and one 4 oz can of diced green chilies. Add all to the crockpot and stir lightly.
  5. Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shreddable.
  6. Remove the chicken breasts and shred them using two forks. Return shredded chicken to the crockpot.
  7. Add 4 oz softened cream cheese to the crockpot. Stir well until fully melted and incorporated, creating a creamy texture.
  8. Taste and adjust salt, pepper, or spices as needed. Add a splash of chicken broth or water if the chili is too thick.
  9. Ladle the chili into bowls and garnish with fresh cilantro and lime wedges if desired.

Notes

If your crockpot has a sauté function, soften onions and garlic before slow cooking to enhance flavor. Use softened cream cheese to avoid clumps. Check chili after 5 hours if your crockpot runs hot to prevent overcooking chicken. For dairy-free, substitute cream cheese with coconut cream and use almond or oat milk. You can also use rotisserie chicken to save time.
