A reliable, velvety slow cooker queso dip that stays warm and smooth for hours, perfect for tailgating and parties. Made with simple ingredients like cream cheese, Rotel, and cheddar, it delivers a rich, stretchy texture without separating.

  • 8 ounces cream cheese, softened and cut into cubes
  • 1 can (10 ounces) Rotel tomatoes, undrained
  • 2 tablespoons heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Shred block cheese yourself if using, as pre-shredded cheese contains anti-caking agents that can cause graininess.
  2. Add softened cream cheese cubes, the entire can of undrained Rotel tomatoes, and heavy cream to a 3-to-4-quart slow cooker.
  3. Sprinkle cumin, garlic powder, salt, and cayenne pepper over the top.
  4. Give everything a gentle stir to distribute spices; do not fully combine yet.
  5. Cover and cook on low heat for 2 to 3 hours, stirring once halfway through to help the cream cheese melt.
  6. Once the cream cheese is mostly melted and the mixture is hot, add the shredded cheddar and Monterey Jack.
  7. Stir gently to incorporate the cheese. If the dip is too thick, add another tablespoon of heavy cream.
  8. Continue stirring until the cheese is completely melted and the dip is smooth and glossy.
  9. Taste and adjust seasoning if needed. Serve immediately with tortilla chips or keep warm on the ‘Warm’ setting.

Notes

Always cook on low heat to prevent the cheese emulsion from breaking and becoming oily. Ensure cream cheese is fully softened before starting. If the dip thickens upon cooling, reheat gently with a splash of milk or cream. Do not freeze this dip as the texture will become grainy.
