A simple, forgiving slow cooker dinner featuring bone-in pork chops simmered in a rich, creamy onion gravy made with condensed soups. Perfect for busy weeknights when you want comfort food with minimal effort.

  • 46 bone-in, center-cut pork chops (about 1 inch thick)
  • 1 can (10.5 oz) condensed cream of onion soup
  • 1 can (10.75 oz) condensed French onion soup
  • 1 tablespoon butter
  • Freshly cracked black pepper
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (optional, for thickening)
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Pat the pork chops dry with paper towels to remove excess moisture. Trim any large pieces of fat if desired.
  2. Place the pork chops in the slow cooker insert. If possible, keep them in a single layer for even cooking.
  3. Place the tablespoon of butter directly on top of the pork chops.
  4. Pour the condensed cream of onion soup over the chops, spreading it to cover as much meat as possible.
  5. Pour the entire can of French onion soup over the top. The meat should be mostly submerged.
  6. Sprinkle a generous amount of freshly cracked black pepper over the top. Do not add salt yet, as the soups are salty.
  7. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
  8. Check for doneness; internal temperature should reach at least 145°F, but 155-160°F ensures tenderness.
  9. If a thicker gravy is desired, stir in the cornstarch slurry during the last 30 minutes of cooking.
  10. Serve immediately with mashed potatoes, egg noodles, or crusty bread.

Notes

Bone-in chops are recommended to prevent drying out. If using boneless chops, reduce cooking time to 4-5 hours on LOW. The gravy will thicken as it cools; add a splash of water or broth when reheating. For extra flavor, sear the chops in a skillet before adding to the slow cooker.
