A simple, 5-ingredient slow cooker meal that delivers creamy, comforting chicken and rice without the stress. Perfect for busy weeknights and meal prep.

Ingredients

  • Boneless, skinless chicken breasts
  • Low-sodium chicken broth
  • Long grain white rice
  • Cream of chicken soup
  • Frozen mixed vegetables (peas, carrots, corn)
  • Garlic powder
  • Onion powder
  • Dried parsley
  • Salt and black pepper

Instructions

  1. Rinse chicken breasts, pat dry, and slice in half if large. Season lightly with salt and pepper.
  2. In a large bowl, whisk together chicken broth, cream of chicken soup, garlic powder, onion powder, and dried parsley.
  3. Pour the sauce mixture into the bottom of a 4-6 quart slow cooker. Add uncooked rice and stir gently to submerge.
  4. Place chicken breasts on top of the rice mixture. Spread frozen mixed vegetables over the top.
  5. Cover and cook on High for 3 to 4 hours, until rice is tender and chicken reaches 165°F.
  6. Remove chicken from the pot and shred into bite-sized pieces using two forks.
  7. Return shredded chicken to the slow cooker and stir everything together.
  8. Let the mixture sit on High for another 15-20 minutes to thicken the sauce.
  9. Taste and adjust salt and pepper. Add a splash of broth or milk if too thick. Serve hot.

Notes

Do not use instant or brown rice as they will alter the texture and cooking time. Use low-sodium broth to control salt levels. Shred chicken after cooking for better texture. If the sauce is too thin, leave the lid off for the last hour to let steam escape.
