  • 6 slices bacon
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp chopped green onions or chives (optional)
  • Salt and black pepper to taste

Instructions

  1. Cook the bacon in a cold skillet over medium heat, turning occasionally, until crispy (8-10 minutes). Remove and drain on paper towels. Once cool, crumble into bite-sized pieces. Save some bacon fat in the pan for cooking chicken.
  2. Pat chicken breasts dry and season both sides with salt, pepper, garlic powder, and onion powder.
  3. In the same skillet with reserved bacon fat (or 1 tbsp olive oil if needed), cook chicken over medium heat for 6-7 minutes per side until golden and cooked through (internal temp 165°F). Remove chicken and set aside.
  4. Lower heat to medium-low. In a mixing bowl, combine softened cream cheese and sour cream until smooth. Add mixture to skillet and warm gently, stirring frequently.
  5. Stir in shredded cheddar cheese until melted and creamy. Adjust seasoning with salt and pepper.
  6. Return chicken to skillet, spoon sauce over top, and sprinkle crumbled bacon evenly. Cover and simmer on low for 5 minutes to meld flavors.
  7. Just before serving, sprinkle chopped green onions or chives over the dish.

Notes

Use room temperature cream cheese for easier blending. Save some bacon fat for cooking chicken for extra flavor. Simmer sauce gently on low heat to avoid curdling. Add a splash of milk or chicken broth if sauce is too thick. Use a meat thermometer to ensure chicken reaches 165°F internal temperature.
