A quick and easy no-bake cheesecake dip swirled with caramel, perfect for fall gatherings. Ready in just 5 minutes with simple ingredients.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup thick caramel sauce, plus more for drizzling
  • 1/8 teaspoon sea salt
  • 1 medium apple, thinly sliced (for serving)
  • Graham crackers, vanilla wafers, or pretzels (for serving)

Instructions

  1. Soften the cream cheese: Take your cream cheese out of the fridge about 30 minutes before you start. If you forgot, unwrap it and microwave it on 50% power for 10-15 seconds. Check it, then go another 10 if needed. You want it soft, not melted.
  2. Beat the cream cheese: In your medium mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until it’s smooth and creamy, about 1 minute. Scrape down the sides of the bowl with your spatula.
  3. Add the powdered sugar: Sift or sprinkle the powdered sugar over the cream cheese. Start mixing on low speed to avoid a sugar cloud, then increase to medium and beat for another minute until everything is combined and fluffy.
  4. Add the vanilla and salt: Pour in the vanilla extract and the pinch of sea salt. Beat on low just until incorporated, about 15 seconds. Taste it here—it should be sweet, tangy, and just a little bit magical.
  5. Swirl in the caramel: Spoon the caramel sauce over the top of the cream cheese mixture. Don’t stir it in completely. Use your spatula to make 3-4 gentle folds, just enough to create ribbons of caramel running through the white cheesecake base. You want visible swirls, not a uniform tan color.
  6. Chill (optional but recommended): If you have time, cover the bowl and pop it in the fridge for 15-20 minutes. This firms up the dip slightly and lets the flavors meld. If you’re serving immediately, it’s still fantastic.
  7. Prepare the apples: Just before serving, slice your apples. I cut mine into thin wedges, about 1/4 inch thick. Toss them with a squeeze of lemon juice if you’re worried about browning, but honestly, they’ll disappear too fast for that to matter.
  8. Assemble and serve: Transfer the dip to your serving bowl. Drizzle a little extra caramel sauce on top and sprinkle with a tiny pinch of flaky sea salt if you’re feeling fancy. Arrange the apple slices and graham crackers around the bowl and watch it disappear.

Notes

Room temperature cream cheese is essential for a smooth texture. Use thick, spoonable caramel sauce (not runny ice cream topping) to keep the swirls distinct. The pinch of sea salt is not optional—it enhances the flavor. For best presentation, swirl caramel just before serving.
