Ingredients

Scale
  • 3 cups shredded cooked chicken (about 10.5 oz or 450 grams), rotisserie chicken recommended
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo sauce (4 fl oz or 120 ml), such as Frank’s RedHot
  • 1/2 cup ranch dressing (4 fl oz or 120 ml)
  • 1 cup shredded sharp cheddar cheese (about 4 oz or 115 grams)
  • 1/2 cup shredded mozzarella cheese (about 2 oz or 55 grams)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper
  • Optional garnish: chopped green onions or parsley

Instructions

  1. Shred about 3 cups (10.5 oz) of cooked chicken and set aside.
  2. In a medium mixing bowl, combine softened cream cheese, buffalo sauce, and ranch dressing. Stir until smooth and creamy with no lumps.
  3. Add garlic powder, onion powder, and black pepper to the mixture and stir well.
  4. Fold the shredded chicken into the cream cheese mixture until evenly coated.
  5. Pour the mixture into the crockpot insert or slow cooker and spread evenly.
  6. Sprinkle shredded cheddar and mozzarella cheese evenly over the top.
  7. Cook on low for 2 to 3 hours, uncovered or with the lid slightly ajar. Stir halfway through cooking to mix melted cheese and keep dip creamy.
  8. Check consistency and taste; adjust salt or buffalo sauce if needed. Add a splash of milk if too thick.
  9. Garnish with chopped green onions or parsley if desired and serve warm with celery sticks, tortilla chips, or crusty bread.

Notes

Soften cream cheese before mixing to avoid lumps. Stir halfway through cooking to prevent sticking and ensure even melting. For a quicker cook, use high for 1.5 hours but watch carefully to avoid drying out. Leftovers keep well refrigerated for up to 4 days and can be frozen for up to 3 months. Reheat gently with a splash of milk to maintain creaminess.
