Ingredients

Scale
  • 10 oz frozen spinach, thawed and thoroughly drained
  • 14 oz canned artichoke hearts, drained, rinsed, and chopped
  • 8 oz full-fat brick-style cream cheese, softened to room temperature
  • 1/2 cup mayonnaise
  • 1 cup mozzarella cheese, freshly shredded
  • 1/2 cup parmesan cheese, freshly grated
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Thaw frozen spinach and squeeze it thoroughly using a kitchen towel or paper towels to remove all excess moisture.
  3. Drain and rinse canned artichoke hearts, then chop into small, bite-sized pieces.
  4. In a large mixing bowl, combine softened cream cheese and mayonnaise. Mix with a hand mixer or fork until smooth.
  5. Add minced garlic, lemon juice, red pepper flakes, and black pepper to the bowl. Mix until incorporated.
  6. Fold in the drained spinach, chopped artichokes, half of the mozzarella cheese, and all of the parmesan cheese.
  7. Taste the mixture and add salt if needed.
  8. Transfer the mixture to a 9-inch baking dish and spread evenly.
  9. Sprinkle the remaining mozzarella cheese on top.
  10. Bake for 20-25 minutes until bubbly and golden brown. Optionally broil for 1-2 minutes for extra browning.
  11. Let rest for 5 minutes before serving.

Notes

Ensure spinach is thoroughly drained to prevent a watery dip. Let cream cheese come to room temperature for smooth blending. This dip can be assembled up to 24 hours in advance and refrigerated before baking. Store leftovers in an airtight container for up to 4 days.
