Cozy Smoked Sausage and Potato Soup

A comforting, creamy one-pot soup made with smoked sausage, potatoes, and herbs. This easy 30-minute meal is perfect for weeknights, power outages, or game day gatherings.

  • 1 pound smoked sausage (Andouille or kielbasa), sliced into half-moons
  • 2 pounds potatoes (Russet or Yukon Gold), peeled and diced
  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon fresh thyme, chopped
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep the ingredients: Peel and dice potatoes into 1/2-inch cubes, slice sausage, chop onion, and mince garlic.
  2. Heat butter in a large heavy-bottomed pot or Dutch oven over medium heat. Add chopped onion and a pinch of salt; cook until translucent (3-4 minutes).
  3. Add minced garlic in the last minute of cooking, stirring constantly to prevent browning.
  4. Push onions to the side and add sliced sausage. Sear for 2-3 minutes until they start to crisp up.
  5. Stir in potatoes, pour in chicken broth, and add bay leaf and thyme. Scrape the bottom of the pot to release browned bits.
  6. Bring to a boil, then reduce heat to low. Cover partially and simmer for 15-20 minutes until potatoes are fork-tender.
  7. Stir in heavy cream and let heat through for 1-2 minutes. Taste and adjust seasoning with salt and pepper.
  8. Remove bay leaf, ladle into bowls, and garnish with fresh parsley. Serve immediately.

Notes

Do not over-stir once potatoes are tender to avoid a gluey texture. If you prefer a thicker soup, mash some potatoes against the side of the pot before adding cream. If using very salty sausage, rinse slices in warm water before cooking. For leftovers, store in an airtight container in the fridge for up to 3 days. Reheat gently on the stove; avoid microwaving to prevent cream separation. Can be frozen, but potato texture may change slightly.
