Cozy Sausage and Potato Soup

A quick, creamy, and comforting soup made with Italian sausage and Yukon Gold potatoes that thickens naturally without heavy roux, ready in under 30 minutes.

  • 1 lb Italian sausage (sweet or hot)
  • 2 large Yukon Gold potatoes, diced into 1-inch cubes
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • Pinch of red pepper flakes
  • 1/2 cup heavy cream or half-and-half
  • Salt and black pepper to taste

Instructions

  1. Dice the potatoes, onion, and garlic. Prepare all ingredients before starting.
  2. Heat a large pot or Dutch oven over medium-high heat. Add the sausage and cook for 5-7 minutes, breaking it up, until browned. Remove sausage with a slotted spoon, leaving the fat in the pot.
  3. Reduce heat to medium. Add butter to the pot. Once melted, add onions and cook for 3-4 minutes until soft. Add garlic and thyme, cooking for 1 minute until fragrant.
  4. Add diced potatoes to the pot and toss in the onion and fat mixture for 2 minutes.
  5. Pour in chicken broth, scraping the bottom to release browned bits. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes until potatoes are tender.
  6. Taste and season with salt and pepper. For thicker soup, mash some potatoes against the side of the pot.
  7. Stir in heavy cream and the cooked sausage. Heat through for 2-3 minutes without boiling.
  8. Ladle into bowls and serve with toppings like cheddar cheese, green onions, or sour cream.

Notes

Do not skip browning the sausage for maximum flavor. If using Russet potatoes, dice them smaller to prevent mushiness. The soup thickens upon standing; add extra broth when reheating. For freezing, omit the cream and add fresh cream upon reheating.
