  • 1 large yellow onion, diced (about 1.5 cups)
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (93/7)
  • 1 can (15 oz) pumpkin puree (100% pure pumpkin)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Plain Greek yogurt or sour cream (for serving)
  • Fresh cilantro, chopped (for serving)
  • Shredded cheddar cheese (for serving)
  • Diced avocado (for serving)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add diced onion and cook for 4-5 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground turkey to the pot. Break it up with a wooden spoon and cook for 5-7 minutes until no longer pink.
  3. Sprinkle chili powder, cumin, smoked paprika, oregano, cinnamon, and cayenne over the turkey mixture. Stir constantly for about 1 minute until fragrant.
  4. Pour in fire-roasted tomatoes, pumpkin puree, and chicken broth. Stir until pumpkin is fully incorporated. Add drained kidney beans and cannellini beans. Stir again.
  5. Bring chili to a gentle boil, then reduce heat to low. Cover pot with lid slightly ajar and simmer for 20-25 minutes, stirring every 5 minutes.
  6. Taste and season with salt and pepper as needed. Adjust consistency with additional broth if too thick, or simmer uncovered if too thin.
  7. Ladle into bowls and serve with desired toppings: Greek yogurt, cilantro, cheddar cheese, avocado, and lime wedges.

Notes

Don’t skip the spice bloom—cooking the spices in hot oil deepens their flavor. Use 100% pure pumpkin puree, not pumpkin pie filling. The chili thickens as it cools, so err on the slightly thinner side. For meal prep, let cool completely before storing; flavors improve the next day.
