Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1/2 cup softened unsalted butter, 1 cup granulated sugar, and 1/2 cup packed brown sugar with an electric mixer until light and fluffy, about 3 minutes.
  3. Beat in 1 cup creamy peanut butter until fully combined, then mix in 1 large egg and 1 teaspoon vanilla extract until smooth and glossy.
  4. In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 3/4 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the peanut butter mixture, blending on low speed until just combined. Do not overmix.
  6. Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball in granulated sugar.
