Cozy One-Pot Taco Soup with Ground Beef

A quick and easy 30-minute dinner featuring browned ground beef, beans, and taco spices simmered in a single pot for rich, comforting flavor.

  • 1 pound (450g) 80/20 ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning (store-bought or homemade mix of cumin, chili powder, paprika, salt, and pepper)
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 can (15 oz / 425g) pinto beans, drained and rinsed
  • 1 can (14.5 oz / 411g) diced tomatoes, undrained
  • 1 can (8 oz / 227g) tomato sauce
  • 2 cups (480ml) chicken broth (low sodium)
  • 1 can (4 oz / 113g) green chilies, diced
  • 1 cup shredded Mexican blend or cheddar cheese
  • Sour cream for serving
  • Fresh cilantro, chopped, for garnish
  • Lime wedges for serving

Instructions

  1. Heat a large pot over medium-high heat. Add the ground beef and break it up with a wooden spoon into small crumbles. Cook until no pink remains, draining excess grease if desired.
  2. Add the diced onion to the pot with the beef and cook until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Sprinkle the taco seasoning over the meat and veggies. Stir well and let it cook for about a minute to toast the spices.
  4. Pour in the diced tomatoes, tomato sauce, chicken broth, and green chilies. Stir everything together and scrape the bottom of the pot to release any browned bits.
  5. Stir in the drained black beans and pinto beans. Mix them in evenly.
  6. Bring the soup to a boil, then reduce the heat to low. Cover the pot partially and let it simmer for about 15 minutes, stirring occasionally.
  7. For a thicker consistency, use a potato masher to mash some of the beans against the side of the pot.
  8. Taste the soup and add salt and pepper if needed. Squeeze in lime juice for brightness if desired.
  9. Ladle into bowls and top with cheese, sour cream, and cilantro before serving.

Notes

For best results, brown the beef well to develop flavor. Taste before adding extra salt as canned ingredients vary in sodium. Soup tastes even better the next day as flavors meld. Can be made in a slow cooker (low 4-6 hours) or Instant Pot (pressure cook 5 minutes, natural release 10 minutes).
