A thick, creamy, and savory sausage potato soup that comes together in about 45 minutes. This one-pot wonder is perfect for busy weeknights and delivers deep flavor with simple ingredients.

  • 1 medium yellow onion, diced
  • 34 cloves garlic, minced

  • 4 cups (32 oz) low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • ½ tsp salt (plus more to taste)
  • ¼ tsp black pepper (plus more to taste)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Brown the Sausage: Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add sliced sausage in a single layer and cook undisturbed for 2-3 minutes until browned. Stir and cook another 2 minutes. Transfer sausage to a plate with a slotted spoon, leaving about 1 tablespoon of fat in the pot.
  2. Sauté the Aromatics: Reduce heat to medium. Add diced onion to the pot and cook, stirring occasionally, for about 4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add Potatoes and Broth: Add diced potatoes, chicken broth, dried thyme, smoked paprika, salt, and black pepper. Stir, scraping up any browned bits from the bottom. Bring to a boil, then reduce heat to a gentle simmer. Cover and cook for about 15 minutes until potatoes are fork-tender.
  4. Partially Mash the Potatoes: Using a potato masher, gently mash about half of the potatoes right in the pot, leaving some chunks for texture.
  5. Add Cream and Sausage: Return the browned sausage to the pot. Stir in heavy cream. Simmer gently for 5 minutes to heat through and meld flavors. Do not let it boil. Taste and adjust salt and pepper as needed.
  6. Serve and Garnish: Ladle soup into bowls. Garnish with fresh parsley if desired. Serve hot with crusty bread or a side salad.

Notes

For a dairy-free option, use full-fat coconut milk or unsweetened oat milk instead of heavy cream. For a lower-fat version, use turkey smoked sausage and half-and-half. To freeze, cool soup completely before adding cream, then freeze for up to 3 months. Thaw overnight, reheat gently, and stir in cream at the end.
