A simplified, one-pot version of classic lasagna that captures all the rich flavors of the Italian favorite without the tedious assembly. The noodles cook directly in the seasoned broth, absorbing the savory sausage and tomato sauce for a creamy, comforting meal ready in under 45 minutes.

  • 1 lb Italian sausage (sweet or hot)
  • 1 large yellow onion, finely diced
  • 4 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 2 tbsp tomato paste
  • 4 cups chicken or vegetable broth (low-sodium)
  • 810 lasagna noodles, broken into pieces
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil leaves, torn
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat a large Dutch oven over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and no pink remains (approx. 5 minutes). Drain excess grease if necessary.
  2. Reduce heat to medium. Add the diced onion and cook until translucent and soft (approx. 3 minutes). Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Stir in the tomato paste, dried oregano, dried basil, and red pepper flakes. Cook for 1-2 minutes to toast the spices and deepen the flavor.
  4. Pour in the crushed tomatoes and chicken broth. Stir well, scraping up any browned bits from the bottom of the pot. Bring the mixture to a boil.
  5. Once boiling, add the broken lasagna noodles to the pot. Stir to ensure they are submerged. Reduce heat to medium-low and simmer uncovered for 20 minutes, stirring occasionally.
  6. Check for doneness by tasting a noodle; it should be tender but not mushy. If needed, cook for another 5 minutes. Taste the broth and adjust salt and pepper as needed.
  7. Remove from heat. Stir in half of the mozzarella cheese until melted. Ladle into bowls and top with remaining cheese and fresh basil. Serve immediately.

Notes

For meal prep, cook noodles separately to prevent mushiness. If freezing, freeze the soup base without noodles and add fresh noodles when reheating. Toasting the spices before adding liquid enhances flavor depth.
