  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 large boneless skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup wild rice blend (mix of wild rice and long-grain white rice)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Wash and chop vegetables. Dice onion, carrots, and celery into small uniform pieces. Peel and mince garlic. Cut chicken into bite-sized chunks.
  2. Melt butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until onions are translucent and veggies soften.
  3. Add garlic and cook for 1 minute until fragrant. Add chicken pieces and stir to coat in butter and veggies. Cook for 3-4 minutes until lightly browned.
  4. Add wild rice blend, dried thyme, bay leaf, salt, and pepper. Stir to toast the rice slightly.
  5. Pour in chicken broth, scraping the bottom of the pot. Bring to a boil, then reduce heat to low. Cover partially and simmer for 20-25 minutes until rice is tender and chicken is cooked through.
  6. In a small bowl, whisk heavy cream and flour until smooth. Slowly pour into simmering soup while stirring constantly to prevent lumps. Simmer for 5 minutes to thicken.
  7. Remove bay leaf. Taste and adjust seasoning. Stir in fresh parsley just before serving. Serve hot with crusty bread.

Notes

Wild rice can expand significantly, so use a blend with white rice to avoid mushiness. Temper the cream by whisking with flour first to prevent curdling. The soup thickens as it cools; add broth or water when reheating. For meal prep, flavors improve after sitting overnight. Can be frozen for up to 3 months.
