A creamy, comforting white chicken chili perfect for tailgating and cold weather. This slow-cooker recipe uses simple ingredients like chicken, white beans, and cream cheese for a rich, velvety texture that stays warm for hours.

  • 2 large boneless, skinless chicken breasts
  • 1 can (15 oz) cannellini beans or great northern beans, drained and rinsed
  • 1 can (4 oz) diced green chilies, undrained
  • 3 cups low-sodium chicken broth
  • 8 oz full-fat cream cheese, cut into cubes
  • 1 medium yellow onion, finely diced
  • 3 cloves fresh garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Finely dice the onion and mince the garlic.
  2. Place the diced onion, minced garlic, chicken breasts, drained beans, undrained green chilies, cumin, and paprika into a 6-quart slow cooker.
  3. Pour in the chicken broth and stir gently to combine.
  4. Cover and cook on low for 6-7 hours (or high for 3-4 hours).
  5. Once the chicken reaches an internal temperature of 165°F, remove it from the pot and shred it using two forks or tongs.
  6. Return the shredded chicken to the slow cooker and add the cubed cream cheese.
  7. Stir well to incorporate the cream cheese; if it doesn’t melt completely, cover and let sit for 10 more minutes.
  8. Stir in the lime juice and taste the chili. Add salt and pepper as needed.
  9. Stir in the fresh cilantro.
  10. Ladle into bowls and serve with desired toppings.

Notes

For best texture, cook on low heat to ensure chicken shreds easily. Do not drain the green chilies as the juice adds flavor. If the chili is too thin, mash some beans against the side of the pot. If too thick, add a splash of broth. Avoid boiling vigorously after adding cream cheese to prevent separation.
