Cozy Crockpot Pumpkin Chili with Black Beans

A lighter, soul-warming slow cooker chili that uses pumpkin puree for a rich, creamy texture without heavy cream. This easy weeknight dinner combines ground turkey, black beans, and warm spices for a healthy and delicious meal.

  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 lb lean ground turkey
  • 2 tbsp olive oil
  • 1 (15 oz) can pure pumpkin puree
  • 2 (14.5 oz) cans diced tomatoes, undrained
  • 1 (15 oz) can tomato sauce
  • 1 cup low-sodium chicken broth
  • 2 (15 oz) cans black beans, rinsed and drained
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 to 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp brown sugar

Instructions

  1. Prep the veggies by peeling and dicing the onion and mincing the garlic.
  2. Heat olive oil in a skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon (about 7 minutes). Add onion and garlic during the last 2 minutes to soften.
  3. Transfer the meat mixture to a 6-quart slow cooker.
  4. Add pumpkin puree, diced tomatoes, tomato sauce, chicken broth, black beans, chili powder, cumin, smoked paprika, cayenne, brown sugar, salt, and pepper.
  5. Stir everything well to combine.
  6. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  7. Taste and adjust seasoning with more salt, pepper, or broth if needed.
  8. Ladle into bowls and serve with desired toppings.

Notes

Use pure pumpkin puree, not pie filling. For a vegan version, swap turkey for plant-based crumbles and use vegetable broth. Rinse beans thoroughly to remove starchy liquid. The chili freezes well for up to 3 months.
