Cozy Breakfast Potato Casserole with Sausage and Cheese

A hearty and comforting breakfast casserole combining tender potatoes, seasoned breakfast sausage, and gooey sharp cheddar cheese. Perfect for lazy weekends or feeding a crowd with minimal effort.

  • 4 cups diced russet or Yukon gold potatoes (peeled or unpeeled)
  • 1 pound ground breakfast sausage (mild or spicy)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 6 large eggs, room temperature
  • 1 cup whole milk or half-and-half
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced (optional)
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel if desired, then dice potatoes into roughly 1/2-inch cubes.
  3. Heat a large skillet over medium heat and crumble in the sausage. Cook until browned and cooked through, about 6-8 minutes. Remove with a slotted spoon and set aside, leaving some fat in the pan.
  4. In the same skillet, add butter, then sauté diced onions and minced garlic until softened and fragrant, about 3-4 minutes.
  5. In a large mixing bowl, whisk together eggs, milk (or cream), salt, and pepper until well blended. Add cooked sausage, sautéed onions and garlic, diced potatoes, and 1 1/2 cups of shredded cheese. Stir gently to combine.
  6. Pour the mixture into the greased baking dish, spreading evenly. Sprinkle the remaining 1/2 cup cheese on top.
  7. Bake for 45-50 minutes until puffed, golden on top, and a toothpick inserted in the center comes out clean.
  8. Let the casserole cool for about 10 minutes before slicing and serving.

Notes

If the top browns too quickly, tent loosely with foil halfway through baking. Stirring halfway through baking can help redistribute heat but is optional. Pre-shredded cheese may affect melt quality; freshly shredded is best. For a crispier edge, bake in a cast-iron skillet or broil briefly at the end. Assemble the night before and refrigerate for easy morning baking.
