Ingredients

Scale
  • 6 medium apples (about 2 pounds or 900g), peeled, cored, and sliced into ¼-inch thick pieces
  • ⅓ cup (65g) granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • Pinch of salt
  • 1 cup (120g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) unsalted butter, melted and slightly cooled

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven. Lightly grease your baking dish with butter or non-stick spray.
  2. Prepare the apples: Peel, core, and slice the apples into ¼-inch thick pieces. You should have about 6 to 7 cups of sliced apples.
  3. Make the filling: In a large bowl, toss the sliced apples with the granulated sugar, lemon juice, cinnamon, nutmeg, cornstarch, and a pinch of salt. Let the mixture sit for 5 minutes.
  4. Make the crumble topping: In a medium bowl, whisk together the oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Pour the melted butter over the dry ingredients and stir with a fork until everything is moistened and clumps together.
  5. Assemble the crisp: Pour the apple mixture into the prepared baking dish and spread it into an even layer. Sprinkle the crumble topping evenly over the apples, covering them completely. Do not press the topping down.
  6. Bake: Place the dish on a baking sheet and bake for 35 to 40 minutes, until the filling is bubbling around the edges and the topping is deep golden brown and firm to the touch. If the topping is browning too quickly, tent the dish loosely with foil for the last 10 minutes.
  7. Cool slightly before serving: Let the crisp rest on a wire rack for at least 15 minutes before serving.

Notes

Use a mix of apple varieties (like Granny Smith and Honeycrisp) for best texture. Don’t skip the cornstarch—it thickens the filling. Let the crisp rest for at least 15 minutes after baking to allow the filling to set. Bake on a sheet pan to catch drips.
