A cozy, creamy soup that balances the earthiness of butternut squash with the sweet-tart flavor of apples. This simple, forgiving recipe is perfect for fall and requires minimal active prep time.

  • 34 lbs butternut squash, peeled and diced into 1-inch cubes
  • 34 medium apples (Honeycrisp, Gala, or Granny Smith), peeled and diced
  • 1 large yellow onion, diced
  • 34 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth
  • 2 tbsp butter or olive oil
  • 1 tsp fresh ginger, grated
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Salt and black pepper to taste
  • 1/2 cup heavy cream or coconut milk (optional)

Instructions

  1. Prep the vegetables: Peel and dice the butternut squash and apples. Dice the onion, mince the garlic, and grate the ginger.
  2. Sauté the aromatics: Heat butter or olive oil in a large pot over medium heat. Add onions and a pinch of salt, cooking for 5 minutes until translucent. Add garlic and ginger, cooking for 1 minute until fragrant.
  3. Add squash and apples: Add the diced squash and apples to the pot. Stir to coat in the aromatics and cook for 2 minutes to soften edges.
  4. Simmer: Pour in the broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat to low. Cover slightly ajar and simmer for 25-30 minutes until vegetables are fork-tender.
  5. Blend: Remove from heat. Use an immersion blender to puree the soup until smooth, or carefully blend in batches in a standard blender.
  6. Finish and serve: Stir in heavy cream or coconut milk. Heat gently for 2 minutes without boiling. Taste and adjust seasoning. Serve hot with desired garnishes.

Notes

For a richer flavor, roast the squash and apples at 400°F for 20 minutes before simmering. If using a regular blender, let the soup cool slightly and cover the lid with a towel to prevent steam burns. The soup can be made ahead and tastes even better the next day. Leave out the cream if freezing.
