Ingredients

Scale
  • 2 cups cooked chicken, shredded (rotisserie chicken recommended)
  • 8 oz cream cheese, softened
  • ½ cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1 tbsp ranch dressing mix
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 34 green onions, thinly sliced
  • 1 package wonton wrappers (about 48 wrappers)
  • 2 tbsp melted butter
  • ¼ cup blue cheese crumbles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray your mini muffin tin with non-stick cooking spray.
  2. Make the buffalo chicken filling: In a medium bowl, combine the softened cream cheese, shredded chicken, Frank’s RedHot sauce, ranch dressing mix, shredded cheddar, and shredded mozzarella. Mix until everything is well incorporated.
  3. Fold the green onions into the filling. Reserve a small handful for garnish later.
  4. Assemble the bites: Take one wonton wrapper and gently press it into a well of the mini muffin tin to form a little cup shape.
  5. Fill each wonton cup: Spoon about 1 to 1½ tablespoons of the buffalo chicken filling into each wonton wrapper.
  6. Repeat until all filling is used. This recipe makes about 24-30 bites.
  7. Brush with melted butter: Using a pastry brush, lightly brush the exposed edges of the wonton wrappers with the melted butter.
  8. Top with blue cheese (optional): If using blue cheese crumbles, sprinkle a few on top of each bite.
  9. Bake for 12-15 minutes, until the wonton edges are golden brown and crispy and the filling is bubbly and hot.
  10. Let them cool for 5 minutes in the pan. Then use a small spoon or offset spatula to gently lift them out of the muffin tin onto a serving platter.
  11. Garnish with remaining green onions.

Notes

Don’t skip softening the cream cheese for a smooth filling. Use a light hand with the filling to avoid overflow. Spray the muffin tin generously to prevent sticking. You can assemble these bites ahead of time and refrigerate for up to 24 hours before baking. Double the batch for larger crowds.
