These crispy baked chicken wings deliver a satisfying crunch without deep frying. The secret is a simple baking powder treatment and a low-and-slow start that renders out the fat before high heat crisps everything up.

Ingredients

Scale
  • 3 pounds chicken wing sections (flats and drumettes, about 2430 pieces)
  • 2 teaspoons baking powder (NOT baking soda)
  • 1 ½ teaspoons fine sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional)
  • Your favorite wing sauce (for serving)
  • Ranch or blue cheese dressing (for serving)
  • Celery and carrot sticks (for serving)

Instructions

  1. Preheat your oven to 250°F (120°C). Position the oven rack in the middle.
  2. Pat the wings completely dry with paper towels. Let them sit for 5 minutes, then pat again.
  3. In a small bowl, mix together baking powder, salt, garlic powder, onion powder, black pepper, and optional cayenne.
  4. Place the dried wings in a large mixing bowl. Sprinkle the seasoning mixture over them and toss with your hands until every wing is evenly coated.
  5. Place a wire rack over a baking sheet. Arrange the wings in a single layer with space between each piece.
  6. Bake at 250°F for 30 minutes.
  7. Increase oven temperature to 425°F (220°C).
  8. Bake for 40-50 more minutes, flipping halfway through with tongs, until the skin is golden brown and crackling.
  9. Check for doneness: internal temperature should reach 165°F (74°C) at the thickest part.
  10. Let the wings rest on the wire rack for 5 minutes before tossing in sauce or serving.
  11. If using sauce, place wings in a large bowl, add sauce, and toss gently. Serve immediately with ranch or blue cheese and veggie sticks.

Notes

Don’t skip the baking powder—it’s essential for crispy skin. Let the wings rest for 5 minutes before saucing to maintain crunch. For extra crispiness, air-dry the wings in the fridge for an hour after patting dry.
