This creamy, spicy, and tangy buffalo chicken dip is the ultimate crowd-pleaser for game day. Made with simple ingredients and a few tricks, it’s thick enough to stay on your chip and packed with flavor.

Ingredients

Scale
  • 3 cups cooked chicken, shredded (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup ranch dressing
  • 1/2 cup hot sauce (Frank’s RedHot recommended)
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional garnishes: chopped green onions, crumbled blue cheese, extra hot sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Soften cream cheese if not already done.
  2. Shred the cooked chicken into bite-sized pieces. If using canned chicken, drain and pat dry.
  3. Grate 2 cups of sharp cheddar and 1 cup of Monterey Jack cheese. Set aside 1 cup of cheddar for topping.
  4. In a mixing bowl, combine softened cream cheese, ranch dressing, and hot sauce. Stir until smooth and fully combined.
  5. Add garlic powder, onion powder, and a pinch of salt and pepper. Stir again. Taste and adjust hot sauce if desired.
  6. Fold in shredded chicken, 1 cup of cheddar, and all of the Monterey Jack cheese until evenly distributed.
  7. Transfer the mixture to a 9×13-inch baking dish and spread into an even layer.
  8. Sprinkle the reserved 1 cup of cheddar cheese evenly over the top.
  9. Bake for 20-25 minutes, until hot and bubbly around the edges and cheese is melted and golden. Optionally broil for 1-2 minutes for a deeper brown crust.
  10. Let the dip rest for 5 minutes before serving.
  11. Garnish with green onions or blue cheese if desired. Serve with sturdy tortilla chips.

Notes

Let cream cheese soften to room temperature for smooth mixing. Use full-fat cream cheese for richest texture. Frank’s RedHot is recommended for authentic Buffalo flavor. Grating your own cheese ensures smooth melting. Let dip rest 5 minutes after baking for perfect scoopable consistency. For a slow cooker version, combine all ingredients except topping cheese, cook on low for 2-3 hours, then add cheese and cook 15 minutes more.
