These bacon-wrapped smokies with brown sugar glaze are the ultimate crowd-pleaser. Salty bacon, savory little smokies, and sweet caramelized brown sugar combine for an irresistible appetizer that disappears fast.

  • 1 package (14 ounces) little smokies (cocktail sausages)
  • 1 pound thin-cut bacon
  • 1/2 cup packed brown sugar
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • Toothpicks

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with aluminum foil or parchment paper. Place a wire cooling rack on top if you have one.
  3. Cut the bacon slices into thirds.
  4. Wrap each little smokie with a piece of bacon, securing it with a toothpick.
  5. In a small bowl, mix the brown sugar, maple syrup, and smoked paprika (if using) until well combined.
  6. Roll each wrapped smokie in the brown sugar mixture to coat evenly.
  7. Place the coated smokies on the wire rack (or directly on the foil-lined baking sheet), leaving space between each one.
  8. Bake for 25-30 minutes, or until the bacon is crispy and the glaze is bubbly and caramelized. Halfway through, rotate the baking sheet and flip each smokie if not using a wire rack.
  9. Remove from the oven and let them cool for 5 minutes on the baking sheet.
  10. Transfer to a serving platter and serve warm.

Notes

Soak toothpicks in water for 10 minutes before baking to prevent burning. For extra crispiness, use a wire rack. Make a double batch as these disappear quickly.
