  • 1 teaspoon pumpkin pie spice (store-bought or homemade)
  • 1/2 teaspoon vanilla extract (pure vanilla, not imitation)
  • 1/4 cup strong brewed coffee or 1 shot of espresso
  • Whipped cream (for topping, optional)
  • A pinch of pumpkin pie spice or cinnamon (for garnish, optional)
  • Optional: 1 tablespoon caramel sauce or maple syrup drizzle (for topping, optional)

Instructions

  1. Combine the milk and pumpkin puree in a small saucepan. Whisk them together over medium heat until the pumpkin is fully incorporated and there are no lumps, about 1 minute.
  2. Add the sugar and pumpkin pie spice. Whisk again until the sugar dissolves and the spices are evenly distributed.
  3. Heat until steaming but not boiling (around 150°F to 160°F). Do not let it boil.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the hot milk mixture into your mug, leaving about an inch of space at the top.
  6. Add the strong brewed coffee or espresso and stir gently to combine.
  7. Top with whipped cream and a sprinkle of pumpkin pie spice, if desired.

Notes

For extra foam, use a milk frother or immersion blender on the warm milk mixture before adding the coffee. If the latte tastes too thin, use 3/4 cup milk instead of 1 cup.
