  • 34 pounds pork spare ribs, trimmed of excess fat
  • ½ cup whiskey (smooth bourbon recommended)
  • ⅓ cup brown sugar, packed
  • ¼ cup honey
  • ½ cup ketchup
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon freshly ground black pepper
  • 1½ teaspoons salt
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Remove the silver skin from the back of the ribs using a sharp knife.
  3. Season the ribs evenly with salt, black pepper, smoked paprika, and onion powder. Rub gently but thoroughly.
  4. Place the ribs bone-side down on a wire rack set inside a baking sheet or roasting pan. Drizzle with olive oil and rub over the surface.
  5. Cover the ribs tightly with aluminum foil and roast in the oven for 2½ to 3 hours until tender and meat starts to pull back from the bones.
  6. While ribs roast, whisk together whiskey, brown sugar, honey, ketchup, apple cider vinegar, and minced garlic in a mixing bowl until smooth and glossy.
  7. Remove ribs from oven and increase oven temperature to 425°F (220°C). Remove foil and brush a generous layer of whiskey glaze over the ribs.
  8. Return ribs to oven uncovered and roast for an additional 20-30 minutes, basting with more glaze every 10 minutes to caramelize the coating.
  9. Check for doneness; ribs should be tender and juicy, with meat pulling away easily from bones. Aim for internal temperature around 190°F (88°C) if using a thermometer.
  10. Let ribs rest for 10 minutes before slicing to allow juices to redistribute.

Notes

Remove silver skin for better flavor absorption and tenderness. Apply glaze in layers during the last 20-30 minutes for a sticky, caramelized finish. Tent ribs with foil if glaze darkens too quickly to prevent burning. Let ribs rest before slicing to keep moist.
