  • ½ cup yellow mustard
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon black peppercorns
  • 2 bay leaves
  • 4 cups water or beef broth
  • Optional: whole grain mustard for glaze texture
  • Optional: carrots and potatoes for cooking alongside beef

Instructions

  1. Rinse the corned beef brisket under cold water to remove excess brine and pat dry with paper towels. (5 minutes)
  2. In a mixing bowl, whisk together ½ cup yellow mustard, ¼ cup brown sugar, 2 tablespoons apple cider vinegar, and minced garlic until smooth. Set aside. (5 minutes)
  3. Place the rinsed corned beef brisket fat side up into the slow cooker. Sprinkle black peppercorns and add bay leaves around the meat. Pour in enough water or beef broth to cover the brisket completely—about 4 cups. (5 minutes)
  4. Cover and cook on low for 8 to 10 hours until the meat is tender and fork-tender. (8-10 hours)
  5. About 30 minutes before cooking is done, remove the lid and brush the mustard glaze evenly over the brisket. Replace the lid and continue cooking for the remaining time to let the glaze set and caramelize slightly. (30 minutes)
  6. Once done, lift the brisket onto a cutting board and let it rest for 10 minutes before slicing against the grain. (10 minutes)

Notes

Rinse the brisket before cooking to reduce saltiness. Apply mustard glaze by brushing it on top near the end of cooking to allow caramelization. Slice against the grain for best tenderness. Use a meat thermometer to check for 190°F internal temperature. Add vegetables halfway through cooking if desired.
