  • 2 cups (200 g) Swiss cheese, shredded
  • 1 cup (150 g) sauerkraut, drained and chopped
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (120 ml) mayonnaise
  • 1/3 cup (80 ml) Russian dressing
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drain and chop the sauerkraut, pressing gently to remove excess moisture.
  3. Shred the Swiss cheese and set aside.
  4. In a large bowl, combine softened cream cheese, mayonnaise, Russian dressing, yellow mustard, Worcestershire sauce, garlic powder, and onion powder. Mix until smooth and creamy.
  5. Fold in the finely chopped corned beef and chopped sauerkraut. Stir gently to combine.
  6. Spread the mixture evenly into an 8×8-inch (20×20 cm) baking dish.
  7. Sprinkle the shredded Swiss cheese evenly over the dip, covering all edges.
  8. Bake for 20-25 minutes until the cheese is melted and golden brown.
  9. Remove from oven and let rest for 5 minutes to thicken slightly.
  10. Garnish with chopped fresh parsley if desired and serve warm with rye crackers, sliced baguette, or crisp veggies.

Notes

Drain sauerkraut well to avoid a watery dip. Use freshly shredded Swiss cheese for the best melting and crispy crust. Let the dip rest 5 minutes after baking to set. For extra crispiness, broil for 1-2 minutes watching closely. The dip can be made ahead by mixing ingredients except cheese, refrigerate up to 24 hours, then add cheese and bake before serving. Leftovers keep well refrigerated for up to 3 days and reheat best in the oven.
