  • 6 to 8 pounds fully cooked bone-in ham (spiral-cut preferred)
  • 1/2 cup honey (raw or clover, preferably local)
  • 3/4 cup light brown sugar
  • 1 tablespoon Dijon mustard (optional but recommended)
  • 1/4 teaspoon ground cinnamon
  • Pinch of ground cloves or nutmeg
  • 2 tablespoons apple cider vinegar or orange juice
  • Whole cloves (optional, for studding the ham)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove any packaging and pat the ham dry with paper towels. Score the fat in a diamond pattern about 1/4 inch deep.
  3. Stud the ham with whole cloves if using, pressing them into the center of each diamond.
  4. In a small bowl, mix honey, brown sugar, Dijon mustard, ground cinnamon, ground cloves or nutmeg, and apple cider vinegar or orange juice until smooth.
  5. Place the ham fat-side up on a roasting rack in a roasting pan.
  6. Baste the ham generously with half of the glaze using a basting brush or spoon.
  7. Cover loosely with aluminum foil to prevent burning.
  8. Roast the ham for 1.5 to 2 hours, basting with the remaining glaze every 30 minutes after the first hour. Use a meat thermometer to check for an internal temperature of 140°F (60°C).
  9. Remove the foil during the last 15-20 minutes to allow the glaze to caramelize and crisp up.
  10. Remove the ham from the oven and tent with foil. Let it rest for 15 minutes before slicing.

Notes

Do not rush roasting; low and slow prevents burning. Score fat about 1/4 inch deep to help glaze soak in. Use a meat thermometer to avoid overcooking. Baste multiple times for a moist crust. Tent with foil if glaze starts to burn. Let ham rest before slicing to lock in juices.
