  • 1 pound ground beef (80/20)
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 medium yellow onion, finely chopped
  • 1 small green bell pepper, finely diced
  • 2 celery stalks, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse 1 cup of long-grain white rice under cold water until the water runs clear. In a medium saucepan, bring 2 cups of chicken broth to a boil. Add the rice, stir, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork before using.
  2. While the rice is cooking, finely chop the yellow onion, green bell pepper, and celery. Mince the garlic cloves.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion, bell pepper, and celery. Cook for about 5 minutes until softened and fragrant, stirring occasionally. Add the minced garlic and sauté for another minute, careful not to burn it.
  4. Push the veggies to one side of the skillet and add the ground beef to the empty space. Break it apart with your spoon and cook for 6-8 minutes, until browned and no longer pink. Stir the veggies and beef together once the beef is nearly cooked through.
  5. Stir in 1 tablespoon tomato paste, 1 tablespoon Worcestershire sauce, 1 tablespoon Cajun seasoning, 1 teaspoon smoked paprika, and salt and pepper to taste. Cook for another 2-3 minutes to let the flavors meld. Taste and adjust seasoning if needed.
  6. Add the fluffed rice to the skillet. Stir everything together thoroughly, breaking up any clumps. Cook for an additional 3-4 minutes, stirring occasionally, until heated through and the rice has absorbed the flavors.
  7. Remove from heat and sprinkle with chopped fresh parsley. Serve immediately.

Notes

If the mixture feels dry, add a splash of broth or water to loosen it up. Rinsing the rice before cooking prevents clumping and keeps it fluffy. Let the ground beef brown undisturbed for a minute or two to develop a crust. Taste and adjust seasoning as needed. For gluten-free, verify Worcestershire sauce ingredients or substitute with tamari.
