  • 1 pound (450 grams) fresh strawberries, firm and ripe
  • 8 ounces (225 grams) good-quality white chocolate chips or bars
  • 2 tablespoons (30 ml) heavy cream (optional but recommended)
  • 1 teaspoon (5 ml) pure vanilla extract
  • A small pinch of sea salt
  • Optional toppings: crushed pistachios, shredded coconut, edible gold dust

Instructions

  1. Rinse strawberries under cold water and pat dry thoroughly with paper towels. Ensure they are completely dry.
  2. Line a baking sheet with parchment paper or a silicone mat. Prepare dipping tools such as tongs, forks, or toothpicks.
  3. Fill a small saucepan with 1–2 inches of water and bring to a gentle simmer. Place white chocolate in a heatproof bowl over the saucepan without touching the water. Stir gently until melted and smooth.
  4. Remove bowl from heat. Stir in heavy cream, vanilla extract, and sea salt until fully combined and silky smooth.
  5. Hold each strawberry by the stem or with a fork and dip into the melted white chocolate, coating about two-thirds of the berry. Let excess chocolate drip back into the bowl.
  6. Place dipped strawberries on the prepared baking sheet. Sprinkle optional toppings immediately if desired.
  7. Chill the baking sheet in the refrigerator for 15–20 minutes until the chocolate is firm.
  8. Serve immediately or store as directed.

Notes

Ensure strawberries are completely dry to prevent chocolate from seizing. Use a double boiler or microwave in short bursts to melt chocolate gently. Adding heavy cream makes the coating silkier. Chill dipped strawberries promptly for best texture. Avoid overheating chocolate to prevent graininess.
