These strawberry champagne jello shots are a quick, easy, and festive treat perfect for celebrations. They combine the bubbly fizz of champagne with sweet strawberry gelatin for a fun and sophisticated party starter.

  • 3 oz (85 g) strawberry gelatin mix
  • 1 cup (240 ml) champagne or sparkling wine
  • 1 cup (240 ml) boiling water
  • 12 tablespoons granulated sugar (optional)
  • Fresh strawberries (optional, for garnish)
  • Nonstick spray or oil, for greasing cups

Instructions

  1. Lightly grease your shot cups with nonstick spray or a thin layer of oil and arrange them on a tray.
  2. Bring 1 cup (240 ml) of water to a rolling boil. Pour into a heatproof bowl and sprinkle the strawberry gelatin powder evenly over the surface. Whisk gently until completely dissolved and smooth.
  3. Taste the mixture and add 1 to 2 tablespoons of sugar if desired, whisking until dissolved.
  4. Let the gelatin mixture cool to lukewarm, about 10 minutes.
  5. Slowly pour 1 cup (240 ml) of chilled champagne into the lukewarm gelatin mixture, stirring gently to combine.
  6. Ladle or pour the mixture into prepared shot cups, filling each about 3/4 full.
  7. Refrigerate the shots for at least 4 hours or until fully set.
  8. Just before serving, garnish each shot with a small slice of fresh strawberry or a tiny mint leaf if desired.

Notes

Do not stir vigorously after adding champagne to preserve bubbles. Chill for at least 4 hours for best texture. For softer shots, reduce gelatin powder to 2.5 oz (70 g). Use a ladle or measuring cup with a spout to pour mixture neatly. Shots keep well for 2-3 days covered in the fridge. Can freeze for up to a week but thaw before serving.
