  • 8 slices white sandwich bread, crusts removed
  • 1 large English cucumber, thinly sliced
  • 8 oz (225 g) cream cheese, softened
  • 2 tablespoons sour cream
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch of garlic powder (optional)

Instructions

  1. Rinse the English cucumber under cold water and pat dry. Slice into thin, even slices about 1/8 inch (3 mm) thick using a sharp knife or mandoline. Set aside on paper towels to absorb extra moisture for about 10 minutes.
  2. In a medium mixing bowl, combine softened cream cheese, sour cream, chopped fresh dill, lemon juice, salt, black pepper, and garlic powder if using. Stir until smooth and fully blended.
  3. Lay out the white sandwich bread slices and carefully cut off the crusts using a serrated knife to create neat rectangles. Optionally, cut each slice into halves or thirds for smaller sandwiches.
  4. Spread about 2 tablespoons of the creamy mixture evenly over each bread slice using a spreading knife or offset spatula.
  5. Arrange 6-7 overlapping cucumber slices on top of the spread on each bread slice.
  6. Top with another slice of bread and press gently to seal. Wrap sandwiches in plastic wrap and chill for at least 20 minutes to meld flavors and firm up the bread.
  7. Remove from fridge and slice sandwiches into fingers or triangles with a sharp serrated knife. Serve immediately or keep chilled until ready to enjoy.
