  • 6 cups romaine lettuce, chopped
  • 2 cups butter lettuce, torn into bite-sized pieces
  • 2 medium boneless, skinless chicken breasts (about 12 oz / 340 g)
  • 4 thick-cut bacon strips, cooked crisp and chopped
  • 2 large eggs, hard-boiled and quartered
  • 1 large ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, thinly sliced
  • ½ cup blue cheese crumbles
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • ½ teaspoon honey

Instructions

  1. Preheat grill or grill pan to medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice thinly.
  2. While chicken grills, fry bacon strips in a skillet over medium heat until crispy, about 5-7 minutes. Drain on paper towels and chop into bite-sized pieces.
  3. Place eggs in a saucepan, cover with cold water, bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes. Cool under cold running water, peel, and quarter.
  4. Wash and chop romaine and butter lettuce, place in a large salad bowl. Halve cherry tomatoes and thinly slice cucumber. Dice avocado just before assembling.
  5. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, honey, salt, and pepper. Adjust seasoning to taste.
  6. Arrange chopped lettuce as the base. Neatly line up sliced grilled chicken, bacon pieces, quartered eggs, diced avocado, cherry tomatoes, cucumber slices, and blue cheese crumbles in rows or clusters.
  7. Drizzle dressing over salad just before serving. Toss gently to combine, taking care not to mash the avocado. Serve immediately.

Notes

Dice avocado just before serving to prevent browning; use lemon juice to keep avocado fresh. Cook chicken, bacon, and eggs ahead for easy assembly. Use a meat thermometer to avoid overcooking chicken. For dairy-free, omit blue cheese or substitute with vegan cheese. Turkey bacon can be used as a leaner alternative.
